A while back, I told you about finding my mother’s recipe for salmon cakes. I’ve been making them regularly the past few months. Since I was in a salmon frame of mind, my eyes widened when I spotted a recommendation on Instagram.
It was for Trader Joe’s Lightly Smoked Salmon. It is packed in extra virgin olive oil in a five ounce container. It is about the size of the trendy tinned fish that you are seeing in gourmet stores and supermarkets.
I might not have paid much attention in the past. But I took a tinned fish class last year at Zingerman’s Deli, which opened my eyes to the possibilities of this type of product.
