Happy first day of autumn. When cooler weather arrives, many people like to eat heartier dishes. Our next cookbook giveaway is right in that vein.
It’s Pate, Confit, Rillete by Brian Polcyn and Michael Ruhlman. You may own one of their previous cookbooks, such as Charcuterie or Salumi. These gentlemen know their cured meats.
Brian is the well-regarded Detroit area chef and a chef-instructor at Schoolcraft College in Livonia, Mich., which turns out top culinary talent. Michael is the prolific author and culinary writer known for many books such as The Making of a Chef and Ratio.
