A cookbook I wish I’d had in New Orleans
One of my greatest discoveries in New Orleans was the wide availability of Vietnamese food. While many people think first of traditional Creole and Cajun cuisine, I was struck how easily I could find Vietnamese food there.
One frustration, though, was that much of what I found was meat focused. This might be because the American customers of Vietnamese restaurants are carnivores, so that was the most-stressed menu ingredient. Or, people from all backgrounds like to eat meat when they go out, and that’s what is offered.
I was constantly asking for extra vegetables or sides of veggies in pho and vermicelli and rice dishes. Everyone was happy to oblige, I was delighted to discover the flavorful tofu served at Nudo, the home of my favorite summer rolls. But, I would have loved to have found more greens and other choices.
